'Defiantly delicious' and now determined, Brine Box to rebuild on Oceanside Pier

OCEANSIDE, Calif. (FOX 5/KUSI) -- The fresh-seafood-to-go concept many have tried after walking the length of the Oceanside Pier will be making a comeback.
Brine Box owners Jessica and Davin Waite confirmed to FOX 5/KUSI Monday that the kiosk-style grab-and-go eatery will be rebuilt following the devastating fire that destroyed their building after less than a year in operation.
"Oceanside is our home and we are incredibly optimistic about rebuilding this business we love with a team that is like family," said the North County restaurateurs, who are also the pioneers behind The Plot, Shoots Fish & Beer and Wrench & Rodent Seabasstropub.
The Waites, who drive their local businesses on the notion of sustainability, also expressed gratitude toward the leaseholder of the restaurant building, formerly Ruby's Diner, that was also destroyed during the unexpected blaze.
Alexander Leff owns OS Pier, LLC., where now only sits scorched remnants of the old building, as well as what was Brine Box. The Waites commended him for his investment and commitment to Oceanside, including rebuilding the end of the iconic pier.
"Witnessing the loss of a piece of Oceanside’s legacy was truly heart-wrenching," Leff told FOX 5/KUSI. "We hold a deep affection for the pier and the city, and understand the profound significance of this iconic landmark to the Oceanside community.”
The building that was destroyed by the fire, which officials said likely started due to accidental causes, was constructed in 1987, according to Leff.
"We will not walk away from its 37-year-old legacy as a place where the community and visitors can gather and dine while gazing out on the beautiful Pacific," he continued. "We know the City of Oceanside is resilient, and we share in the community’s desire to have the pier restored to its former glory."
This includes the rebuilding of Brine Box, though it's too early to predict a reopening date. Leff said he plans to work with city officials and California Coastal Commission to make it all possible.
The Waites previously described Brine Box as “defiantly delicious.” Now, they are also adding the word determined as they set their sights on making a comeback. Fresh fish and chips, Korean barbeque prawns and clam chowder tater tots will be eaten atop the Oceanside Pier, once again.
